凉皮大多数是把面粉拌成浆液,放在锣锣里蒸出来的。跟很多凉皮不同,擀面皮是擀出来了,而后才上锅蒸的。这也是它的名字得来之处。蒸好的皮子味道也很特别,劲道不必说,后味也很足。它的这种口感全是靠长时间的沉淀和发酵而得来。很多人喜欢它,甚至是爱上它,其中自是有原因。
