Smoked Chipotle Chicken Tacos w/ Spicy Salsa Verde

We're back with a the best taco of the series: SPICY, SWEET, & SMOKEY CHIPOTLE CHICKEN TACOS. In this video, I'll show you an awesome meat rub, smoking meats on the Weber grill, and balancing a spicy salsa and yogurt sauce.

~ RECIPES ~

---- SMOKEY CHIPOTLE RUB ----
- 6 garlic cloves, crushed
- 2 TBSP Chipotle Powder
- 2 TBSP Salt
- ¼ cup smoked paprika
- 1 TBSP Brown sugar
- 2 TSP black pepper

1. Add the crushed garlic cloves and chipotle powder until a rough paste forms.
2. Mix in the salt, smoked paprika, brown sugar, and black pepper.
3. Can be stored in an airtight container for a couple weeks in the fridge.

---- SMOKING THE CHICKEN ----

- 5 Chicken Thighs
- Charcoal for a grill
- Smoking wood (Apple, cherry, hickory)

1. Apply the chipotle rub to the chicken thighs (6)
2. Let sit for at least 30 minutes or overnight
3. Prepare a charcoal grill according to the charcoal you are using.
4. Prior to grilling, add a piece of apple wood, or wood grilling chips.
5. Place the chicken breast on the direct heat for 2 minutes, flip, 2 more minutes, and then move to indirect heat for 6 minutes or the internal temperature is 155 degree F
6. Let the chicken sit for 5 minutes prior to slicing against the grain.

---- Roasted Serrano Salsa - From Rick Bayless - Mexican Everyday ----
- 4 oz jalapeno or serrano chiles (12-16 peppers)
- 4 garlic cloves
- 2 TBSP lime juice
- Salt
- ¼ cup water

1. Turn the broiler on high.
2. Place the serranos and peeled garlic cloves on a baking sheet
3. Broil until the chiles are blackened and soft (2-3 minutes tops)
4. Throw everything into a blender with lime juice and ¼ cup water. Process until smooth.
5. Pour into a bowl and TASTE IT (LITTLE BIT - THIS SHOULD BE SPICY) - Adjust salt as you see fit (½ tsp). You can also thin out the salsa with water.

---- CILANTRO YOGURT SAUCE ----
- Cilantro, finely chopped
- Yogurt
- Lime juice
- Salt

1. Add the cilantro, yogurt, and lime juice to a bowl until well combined.
2. TASTE IT - Add salt (at least ½ tsp) and more lime juice as needed
