中秋节快到了,想吃月饼却不要等3天回油吗?推荐你做这款台式3Q月饼、麻薯月饼、脆皮月饼。这月饼采用千层酥皮为外皮,中间包着3种馅料+自制麻糍。趁温切开月饼,外皮酥脆掉渣,满满黑白芝麻香,中间有芋头蓉+麻糍+鸡肉丝+咸蛋黄,层次口感和口味超丰富。自制麻糍也拉丝软糯却不黏牙,咸甜搭配太香了,垂涎三尺!

收藏方式:做好温吃口感最佳。冷却后收密封容器,室温3-5天。吃前Toaster弄热回温回酥再吃。

This mooncake uses puff pastry crust, with 3fillings + homemade mochi wrapped in the center. While warm cut open mooncake, crispy crust with crumbs falling, loaded with black white sesame flavors, with yam lotus paste + mochi + chicken floss + salted egg yolks within, full of layers, texture and flavors. Homemade mochi has stringpull effect, soft glutinous yet not sticky, perfect combo of salty sweet flavor, so fragrant, mouth watering!

Storage Method: Best eaten warm after baked. After cooling, store in an airtight container at room temperature for 3-5 days. Before eating, reheat with toaster, let warm, to return flakiness then only eat.

45g Glutinous Rice Flour 糯米粉
35g Rice Flour 粘米粉
20g Cornstarch 玉米淀粉
18g Corn Oil 玉米油
35g Caster Sugar 细砂糖
0.5g Salt 盐
180g Milk 牛奶
(After water boiled, steam on High Heat for 15minutes) (水沸腾后,大火蒸15分钟)

White Rice Wine 白米酒
(Preheated Oven 160C: 7minutes, 预热烤箱160c: 7分钟)

32g Icing Sugar糖粉
3g Salt盐
55g Unsalted Butter (Soften) 无盐牛油(软化)
65-70g Water水

100g All Purpose Flour普通中筋面粉
65g Unsalted Butter (Soften) 无盐牛油(软化)

240g Yam Lotus Paste 芋头蓉 (8pcs, 30g/pc)=
240-280g Mochi 麻糍 (8pcs, 30-35g/pc)=
80g Chicken Floss 鸡肉丝 (8pcs, 10g/pc)=
6pcs Salted Egg Yolks咸蛋黄 (8pcs, 10g/pc)=
