Tuscan Chicken with Pesto Pasta
Ingredients for Tuscan Chicken:
Chicken breast 4-5
All-purpose flour as req
Salt (each side) a pinch
Black pepper powder (each side) a pinch
Paprika powder (each side) a pinch
Butter ¼ cup
Coated Chicken 4-5
Garlic (chopped) 1 tbsp
Onion (chopped) ¼ cup
Sun-Dried Tomatoes ¼ cup
Chicken stock 1 cup
Cream ½ cup
Salt ½ tsp or to taste
Black pepper (crushed) ½ tsp or to taste
Parmesan cheese (grated) ½ cup
Baby spinach (leaves) 20-25
Fried Chicken
Green coriander (chopped) for garnishing
Ingredients for Pesto Pasta:
Fresh basil leaves 2 cups
Parmesan Cheese ½ cup
Olive oil ½ cup
Garlic cloves 4-5
Salt ½ tsp or to taste
Black pepper powder ½ tsp
Oil 1 tbsp
Boiled pasta 400g
Pesto paste ½ cup or as req
Pasta stock ½ cup
Salt (if req)
Cherry Tomatoes (halved) ½ cup
Parmesan cheese (grated) for garnishing
Directions for Tuscan Chicken Preparation:
1. On a kitchen board, place chicken breasts and season each side with salt, black pepper and paprika. Rest them for 2-3 minutes.
2. Coat this seasoned chicken in all-purpose flour.
3. In a pan heat butter and cook coated chicken on it. Cook each side for 2-3 minutes or until golden brown and crispy.
4. Remove the chicken and on the same pan add garlic, onion and cook for a minute.
5. Add sun dried tomatoes and cook for 2-3 minutes.
6. Add chicken stock, salt, black pepper and cook for 2-3 minutes.
7. Add cream and cook for another 2-3 minutes.
8. Add parmesan cheese and cook until cheese melts. Add spinach leaves and cook until leaves get soft.
9. Add cooked chicken breast and simmer for 2-3 minutes. Your Tuscan Chicken is ready. Garnish it with coriander.
Directions for Pesto Pasta Preparation:
10. In blender add fresh basil leaves, parmesan cheese, garlic, salt, black pepper powder and blend well into paste. Add olive oil gradually and blend again. Your pesto paste is ready.
11. In a pan heat oil and add boiled pasta, pesto paste, pasta stock and cook for 2-3 minutes.
12. Add cherry tomatoes and cook for another 2-3 minutes.
13. Dish it out and garnish it with parmesan cheese. Your pesto pasta is ready. Serve with Tuscan chicken and enjoy.

Cooking time: 30-40 mins
