I wasn't vegan when I was living in Australia 15 years ago. I also didn't know much about food from all around the world but Australia is such a land of immigrants and working as a chef assistant at a cafe and enjoying eating out a lot with my friends gave me so much experience and knowledge about food.
I'm not sure when I can travel to Australia next time but until then, I'm going to enjoy different varieties of food from Australia :)

Ingredients:

For the sushi rice :
450g rice
60g rice vinegar
2 tbsp beet sugar
1 tsp salt

For the orange sesame sauce :
200g orange
40g soy sauce
40g olive oil
40g toasted white sesame seeds
1/2 tsp salt

400g tempeh

300g broccoli
300g pumpkin
200g asparagus
200g mushroom
olive oil
salt and pepper

2 sheets nori
400g avocado

For garnish :
winter cherries
toasted white sesame seeds

Instructions:

1. make sushi rice. in a small cup, combine rice vinegar, beet sugar and salt then set aside until it dissolves. cook rice and then pour sushi vinegar over the rice and mix well.
2. in a blender, mix all the ingredients for the orange sesame sauce. pour some of it over tempeh.
3. cut vegetables in a bite size and drizzle olive oil and sprinkle salt and pepper. put them with tempeh in an oven and bake at 356F/180C for 30 minutes.
4. Plate sushi rice, nori sheets, avocado, vegetables, tempeh, winter cherries, sesame seeds. drizzle orange sesame sauce or soy sauce as you like.
5. Enjoy!

「材料」4人分

酢飯
お米 3合
米酢 60g
てん菜糖 大さじ2
塩 小さじ1

オレンジセサミソース
オレンジ 200g
醤油 40g
白入りゴマ 40g
オリーブオイル 40g
塩 小さじ1/2

テンペ 400g

ブロッコリー 300g
アスパラ 200g
カボチャ 300g
マッシュルーム 200g
オリーブオイル 適量
塩 適量
胡椒 適量

海苔 2枚
アボカド 400g
鬼灯 適量
白胡麻 適量

「作り方」
1、寿司酢の材料を混ぜ合わせておき、炊いたお米と混ぜ合わせ酢飯を作る。
2、オレンジセサミソースの材料をブレンダーで混ぜる。ソースの一部をテンペに絡める。
3、野菜を適当な大きさに切り、オリーブオイル、塩・胡椒をして2と一緒にオーブンに入れて180℃で30分ほど焼く。
4、酢飯、海苔、テンペ、野菜、鬼灯、白胡麻、の順に盛り付け、オレンジセサミソースをかけて食べます。
5、エンジョーイ!
