Today's video and recipe are special. The indomitable Sienna Cafe team take over our channel to show us a breathtakingly beautiful and deliciously spicy noodle-soup, the Chitol Laksa Bowl (more on that in a bit).

But these, instead of being straight-up Bong Eats recipes, are twists on our recipes by the two talented Sienna chefs, Auroni and Avinandan. This 'chop shop' will pop-up at the Hindustan Park outlet of Sienna Cafe from 20th to 25th October 2020.

🍜 Back to the noodle-soup recipe. The Sienna team was kind enough to invite us to film this recipe at their Park Street outlet. Although for reasons of space (we're still in the pandemic after all!) and lighting we couldn't shoot this inside the Sienna kitchens, we did enjoy having the entire (now sadly empty) restaurant floor all to ourselves. Enjoy this hearty laksa recipe made with chitol fishballs, which Chefs Auroni and Avinandan break down for us to recreate at home. While you are at it enjoy their expert chopping and prepping styles, admire all their restaurant-grade equipment, and don't forget to stay on until the end as Auroni explains his thought process behind plating the laksa bowl for service.
In Auroni's words: 'At Sienna Store & Cafe, the kitchen family is always trying to look for inspiration in preparations and ingredients that are local. After all, we are an organisation that rose from a small workshop in Santiniketan and a tiny cafe from the bylanes of Calcutta. Chitol machh, especially muittha, is one such preparation that really is close to our hearts and bellies. We've had so many versions—served at pice hotels, at biye-baris, personally made by hand by thammas and mammas alike. But when our team tried the Bong Eats take on this classic, there was just so much inspiration—so very, many ideas. Our minds and palates went to another place, another level and ultimately arrived at this delicious and nourishing laksa bowl. This is our ode and tribute to their cooking and culinary craft.
