Japan's Vegan Ramen UZU | How A Kyoto Restaurant Blends Art With Sustainability【SDG】
Rainy season seems to have come early to Kyoto. And with that, the flooding of the Kamogawa river. Now, not every torrential downpour is a sign of climate change, but it certainly does make you think about it. We think of many questions. What can we do to be more sustainable? What choices can we make to help? An obvious place to start is our relationship with food, how and what we consume. Of the options available to minimize our environmental impact Vegan food is a strong contender. And where people may have hesitated to try Vegan food, many are opening their minds to the possibility. Uzu restaurant Kyoto has embraced the philosophy of Vegan food in a difficult time. Starting their business at the beginning of the pandemic meant having to survive with a niche product in a time when even the most popular restaurants could fail. So far, they have succeeded in the face of great challenges. They provide high-class yet affordable ramen served in a room beautifully designed in collaboration with teamLabs, a famous art installation group based in Tokyo. The art and artful food combines together for an experience like none other.
