I'm back with the roasted chicken you may have saw snippets of from last week's spaghetti squash recipe.
This chicken is cooked to crispy perfection with a juicy inside. Hope you enjoy!

█ Recipe █
• 2 Chicken Quarters, French trimmed
• Salt
• Pepper
• Nutmeg
• Paprika
• ½ TBSP ghee (or high smoke point oil)
Preheat oven to 475 degrees Fahrenheit.
Trim chicken quarters. Season with salt, pepper, nutmeg, and paprika.
Heat a cast iron with ghee over medium high heat. Place chicken skin side down and cook for 12 minutes until fat is rendered and skin is crispy.
Put cast iron into oven and cook for additional 12 minutes. Flip chicken skin side up and bake for 5 more minutes until skin is crispy brown and the internal temperature reaches 165 degrees Fahrenheit.
