Baked Mexican Rice with Cheese Patties

Baked Mexican Rice with Cheese Patties is simply party perfect! Although it involves preparing the Mexican rice, cheese patties and a special tomato sauce too, each of these is quite easy to prepare and will not take too much time. You can prepare all these in advance and arrange them in a baking dish, ready to be stowed into the oven just a while before the guests arrive. Watch their faces light up as the aroma of tomatoes, onions, melting cheese and browning rice waft out of the oven tantalizingly.

Preparation Time: 25 minutes.
Cooking Time: 20 minutes.
Serves 4.
Baking Temperature: 200°C (400°F).
Baking Time: 15 minutes.

For the Mexican rice
3 cups cooked long grained rice (chawal)
1 tbsp oil
½ cup finely chopped onions
½ tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
½ cup chopped and boiled French beans
½ cup chopped and boiled carrot
1 tsp chilli powder
Salt to taste

For the cheese patties
¼ cup grated processed cheese
1 cup boiled, peeled and mashed potatoes
½ cup crumbled paneer (cottage cheese)
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
1 tbsp cornflour
Salt to taste
Oil for greasing and cooking

For the tomato sauce
1½ cups fresh tomato pulp
1 tbsp oil
½ cup finely chopped onions
1 tsp garlic (lehsun) paste
½ tsp chilli powder
½ tsp dried oregano
½ tsp sugar
Salt to taste

For the topping
¼ cup grated processed cheese

For the Mexican rice
1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.
2. Add the ginger and garlic paste and sauté on a medium flame for a few seconds.
3. Add the french beans, carrots and chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
4. Add the rice and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

For the cheese patties
1. Combine all the ingredients in a deep bowl and mix well.
2. Divide the mixture into 12 equal portions and roll each portion into a 50 mm. (2”) diameter flat round patty.
3. Heat a non-stick tava (griddle), grease it with a little oil, place all the patties on it and cook on a medium flame, using a little oil till they turn brown in colour from both the sides. Keep aside.

For the tomato sauce
1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 2 minutes.
2. Add the tomato pulp, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

How to proceed
1. Just before serving, spread the rice on a greased deep baking dish.
2. Place the cheese patties over the rice and evenly spread the tomato sauce.
3. Top it with cheese and bake in a pre-heated oven at 200°C (400°F) for 10 minutes.
Serve hot.
