本日の動画は京都御所南にある古来日本の世界観を強く感じさせるスピリチュアルなお寿司屋さん「寿斗ふかがわ」に密着した動画となっております。

大将の深川さんには尊敬する二人の師匠がいらっしゃり、それぞれ江戸前と京寿司の伝統的な技法を学ばれたそうです。
今でも仕込みの時、寿司を握る時に二人の大将の姿が頭の中でずっと流れているというお話が非常に印象的でした。

また、深川さんは日本の食文化にとてもお詳しい方で、アラブの王族も深川さんの話を聞きに、メモを取りながら寿司を食べに来るんだそうです。

私も「おにぎりの進化系が寿司なんだよ」という話が妙に腑に落ちて、非常に納得してしまい面白かったです。

今回は大将おまかせのお昼１万円のコースを頂いたのですが、炙り秋刀魚ぐらいからもう訳がわからないくらい美味な感じになってきて、最後サービスの最高級カラスミの握りでめでたく昇龍拳しました。笑

どんどん若い方や女性の方にも来てほしいとの事、京都にお越しの際は皆様是非一度食べ歩きに訪れてみて下さい！
