Kumro'r Bora and Kumro Bhaja are two easy Bengali pumpkin recipes that are common in a Bengali meal, especially in autumn and winter. The ripe sweet pumpkin (mishti kumro) is in season starting September and it starts making appearances everywhere. For example, in a Bangal household the Lokkhi Pujo'r bhog is incomplete without the five kinds of fried vegetables one of which is (kumro) pumpkin. Both of these are best served either with Khichuri (link below) or with Bhaja Moog Dal (link below) although you can eat it with any dal you like.

The name "Kumro bhaja" is literally the recipe of this dish--it is that easy! But in this video we show you a few important tips of cutting the pumpkin to create the perfect kumro bhaja.

Kumro'r bora is a pumpkin fritter. In our house we prefer using maida (plain flour) instead of besan (Bengal gram flour) because maida is neutral and does not overpower the beautiful sweet flavour of the mishti kumro. One could, of course use besan for the batter too. If you decide to go that way, use the batter mix from our beguni recipe.
