饼皮=30/110x75=20克
馅料+咸蛋=80/110x75=55克

♦食谱 =5粒月饼=(100克月饼磨/颗)
=饼皮 (30克/颗)=
15-20克花生油
55克转化糖浆
2-3克枧水
少许 盐
80克中筋面粉
=馅料 (80克/颗)包括咸蛋=
325克馅料 (130克紫薯莲蓉+130克白莲蓉+65克豆沙)
5颗 咸蛋黄
1汤匙 玉米油
1汤匙 米酒
35克 瓜子
=蛋黄液=
1汤匙 牛奶
1颗 蛋黄
(第一烤)烤箱165C: 5分钟
(第二烤)烤箱165C: 10分钟
(第三烤)烤箱165C: 10-12分钟
(收在密封容器,室温回油2-3天)
♦Recipe =5pcs mooncakes= (100g mooncake mould/pc)
=Mooncake skin (30g/pc) =
15-20g Peanut Oil
55g Golden Syrup
2-3g Alkalie Water/Lye Water
Pinch of Salt
80g All Purpose Flour
=Filling (80g/pc) including salted egg yolk=
325g Fillings (130g Purple Potato Lotus + 130g White Lotus + 65g Red Bean Paste)
5 Salted Egg Yolks
1Tbsp Corn Oil
1Tbsp Rice Wine
35g melon seeds
=Egg Wash=
1Tbsp Milk
1 Egg Yolk
(1st Bake) Oven 165C: 5 minutes
(2nd Bake) Oven 165C: 10 minutes
(3rd Bake) Oven 165C: 10-12 minutes
(Keep in airtight container, return oil for 2-3days at room temperature)
