The Basic Recipe of Onions, Milk, Salt & Pepper is refined here by the Chef with various Spices. But that's a Trade Secret.
[4] The marinated Meat has to be in the Cold Room for 48 Hours
The Meat is left to rest for 48 Hours so that the Meat fully absorbs the Marinade.

A perfect Doner Kebab needs good Lamb Fat so that it becomes juicy and tender when grilled.
