[INDONESIAN]
Resep Soto Betawi (untuk 8-9 porsi)

Bahan:
1 kg daging sengkel
500 gr urat tunjang, opsional
2 liter air
100 ml santan
50 gr susu evaporasi
1 sdm garam
1 sdm gula
1 sdm kaldu sapi
½ sdm penyedap / kaldu jamur

Bumbu halus:
8-10 siung bawang putih
15 siung bawang merah
6 butir kemiri
2 cm kunyit
2 cm jahe
1 sdt ketumbar
½ sdt jintan
1 sdt lada putih utuh
Minyak

Rempah:
2-3 iris lengkuas
2 batang serai, geprek
3 lembar daun salam
5 lembar daun jeruk
5 butir kapulaga
5 butir cengkih
1 batang kayu manis
1 buah bunga lawang

Pelengkap:
1-2 buah kentang, ukuran besar
2-3 buah tomat, potong
1 batang daun bawang, potong
2-3 seledri, potong
Bawang goreng
Cabai rawit, rebus
Jeruk limau
Minyak untuk menggoreng

Bahan oseng:
Daging dan kuah soto betawi
10 siung bawang merah ukuran kecil
1 buah tomat
25 gr cabai rawit hijau
1 batang daun bawang
1 sdm kecap manis
1 sdm saus tiram
1 sdm minyak samin / margarin
Bumbu-bumbu sesuai selera

Langkah:
1. Untuk bumbu halus, blender kemiri, bawang putih, bawang merah, jahe, kunyit, jintan, ketumbar, lada putih dengan minyak hingga halus
2. Tumis bumbu halus hingga keluar minyak dan wangi, lalu masukkan serai, lengkuas, daun salam, daun jeruk, kapulaga, kayu manis, cengkih, dan bunga lawang, aduk rata
3. Masukkan urat tunjang dan daging yang telah dipotong, lalu tambahkan garam, gula, dan kaldu sapi,aduk rata
4. Tambahkan air, daun bawang dan seledri, presto selama 45 menit lalu masukkan santan, susu evaporasi, dan penyedap aduk rata
5. Potong-potong kentang kemudian goreng hingga matang, tiriskan
6. Untuk soto oseng, panaskan wajan, masukkan minyak samin, tumis daun bawang, tomat, bawang merah, dan cabai rawit hingga wangi lalu masukkan daging, saus tiram, kecap manis dan bumbu-bumbu sesuai selera,aduk rata

Soto Betawi Recipe (yield 8-9 servings)

Ingredients:
1 kg beef shank
500 g beef tendons, optional
2 L water
100 ml coconut milk
50 g evaporated milk
1 tbsp salt
1 tbsp sugar
1 tbsp beef stock
½ tbsp flavor enhancer / mushroom stock powder

Blended Spices:
8-10 clove garlic
15 pc shallot
6 pc candlenut
2 cm turmeric
2 cm ginger
1 tsp coriander
½ tsp cumin
1 tsp whole white pepper
Oil

Spices:
2-3 slice galangal
2 pc lemongrass, pounded
3 pc bay leaf
5 pc lime leaf
5 pc cardamom
5 pc clove
1 pc cinnamon
1 pc star anise

Add-ons:
1-2 pc potato, large
2-3 pc tomato, sliced
1 pc green onions, sliced
2-3 pc celery, sliced
Fried shallots
Bird’s eye chili, boiled
Kaffir lime
Oil for frying

Stir-Fried Soto ingredients:
Soto Betawi meat and broth
10 pc shallot, small
1 pc tomato
25 g green bird’s eye chili
1 pc green onion
1 tbsp sweet soy sauce
1 tbsp oyster sauce
1 tbsp ghee / margarine
Seasoning, to taste

Steps:
1. For the blended spices, blend the candlenuts, garlic, shallots, ginger, turmeric, cumin, coriander, and white pepper with oil until smooth.
2. Sauté the blended spices until oily and fragrant. Then, add the lemongrass, galangal, bay leaves, lime leaves, cardamom, cinnamon, clove, and star anise. Stir.
3. Add the sliced tendons and beef shank. Season with salt, sugar, and beef stock. Stir.
4. Add water, green onions, and celery. Pressure cook for 45 minutes, then add the coconut milk, evaporated milk, and flavor enhancer. Stir.
5. Slice the potatoes and fry until cooked. Set aside.
6. For the Stir-Fried Soto, heat the pan and add ghee. Sauté the green onions, tomatoes, shallots, and bird’s eye chili until fragrant, then add the meat, oyster sauce, sweet soy sauce, and seasoning, to taste. Stir.
7. Soto Betawi is ready to serve.
