Kerala Style Chicken Biriyani Recipe

Ingredients
Chicken - 1 kg
Basmati rice - 1 kg
onion - 5 nos
Ginger - 1 nos
Garlic - 6 or 7 nos
green chilli - 1 or 2 nos
Lemon - 1/2 piece
Coriander leaves -1 hand full.
Mind leaves -small hand full
Turmeric powder -1tbsp
Red chilli powder - 1 1/2 tbsptbsp
Garam masala - 1 tbsp
Coriander powder - 2 tbsp
Cashew nut - 250 grm
Raisins -250 grms
Cinnamon - 1 nos
cardamom- 3 or 4 nos
cloves - 2 or 3 nos
Star anise-1 nos
black pepper seed - 1 tsp
sait - 1 or 2 tbsp
oil - 3 or 4 tbsp
Method
Today , we have to prepare simple chicken biriyani recipe.
lets start our preparation,
Firstly we have to crush ginger and garlic into fine paste set aside.
Take a small bowl and squeeze half lemon juice and keep aside.
Take apan add cleaned chicken pieces ,turmeric powder,red chilli powder and coriander powder
Then add squeezed lemon juice,salt and crush ginger garlic paste.
Mix them well and marinated for half an hour.
Heat oil in a pan add some amount of chopped onion
Saute the onions until they are well caramelized.
Transfer the caramelized onion to a bowl and set aside.
Then add cinnamon , cardamom,cloves star anise and black pepper into the hot oil and saute them well.
Then add chopped onion and green chilli ,saute them well.
Add some salt and saute them well.
Now we have to add spices like turmeric powder, red chilli powder and fennel powder .
Then add coriander powder and pepper powder .
Mix them well and cook for 2 to 3 minutes.
Then we have to add marinated chicken pieces ,combine them well.
Then pour some water and mix them well.
Cover and cook till the chicken become soften.
Ones the chicken is well cooked ,remove from fire and set aside.
Then wash the rice thoroughly .then soak for half an hour.
Drain the water completely and set aside.
Heat water in a heavy bottom pan .
Add spices like cardamom, cinamon, cloves,star anise and black pepper seed .
Pour small amount of caramelized onion fried oil .
Add some salt and stir them well.
Then we have to add soaked basmati rice and mix them well
Cover and cook for some minutes.
Then add some caramelized onion and mix them well.
Cover and cook till the rice become well cooked .
Remove from fire and keep aside.
Heat ghee in a pan add cashew nuts and fry them well till they become golden brown .
Drain excess ghee and keep aside.
Then add raisins and fry them well.
Drain and keep aside.
Take a pan add cooked chicken masala .
On the top springle some fried onion, mint leaves and coriander leaves.
Then next layer we will add cooked basmati rice .
Finally we Springled caramelized onion ,fried cashew nut and raisins.
Just cover and cook for 6 to 7 minutes .
Remove from heat and keep aside.
serve the tasty chicken biriyani with salad.
