用分蛋的方式做磅蛋糕。这种做法比全蛋打法的磅蛋糕更加轻盈柔软,组织也很细腻。不知道是不是蒸浴法的缘故,蛋糕体也很湿润,是我喜欢的口感。

如果是用全蛋的打法,我都会加少许优格好让蛋糕吃起来没那么干。被PH大师影响,我有时候也会加入鲜奶油增加蛋糕的香气。这个分蛋做法的磅蛋糕厉害的地方是用基本的材料就能做出很棒的口感,很值得推荐。

材料:
1)牛油 – 150g
2)糖 – 120g (分成60g & 60g)
3)香草精 – 1 tsp
4)蛋 – 3个
5)鲜奶 – 80g
6)低筋面粉 – 150g
7)泡打粉 – 1 tsp
8)可可粉 – 1 tbsp
9)热水 – 2 tbsp

**用蒸浴法让蛋糕的表面不要开裂得太大。不介意的话也可以直接烘烤。
**放在密封的盒子室温保存。

4)Egg – 3
5)Milk – 80g
6)Cake Flour – 150g
7)Baking Powder – 1 tsp
8)Cocoa Powder – 1 tbsp
9)Hot Water – 2 tbsp

**I used steam bake method to prevent the surface from big crack. You can skip this step and bake as usual if desired.
**Keep at room temperature in air tight container.
