少油，免油炸，不油腻又色香味俱全的炒茄子。这道菜有红、黄、绿、紫、白五种色彩，可以说是五彩缤纷、色香味俱全。

茄子是比较不容易炒好的蔬菜，餐馆都是用油炸后再炒，好吃是没问题，但茄子吸饱了油的样子也着实不敢多吃。家庭这样制作也不太好操作，但放油少了茄子太干，加水多了味道又受影响。最好的办法就是炒之前，先把茄子表面粗糙的空隙结构压扁压实，让它自身的水分溢出来，炒的时候油就不好进入了。

茄子一个 (Globe Eggplant)
柿子椒半个

微辣红螺丝椒一个（Cubanelle Pepper）
金色马可尼甜椒一个（Marconi Golden Pepper）
（这两种都是先从商店买来留籽，种植成功的，很好吃）

生抽1汤匙
蚝油1汤匙
盐1/2汤匙
葱姜蒜末适量
蔬菜油适量
柠檬半个
香菜装饰
