Resep Lumpia Ayam Jamur (20 pcs)
Bahan:
20 lembar kulit spring roll ukuran besar
Bahan isian:
350 gr ayam giling
150 gr jamur shitake & champignon
150 gr buncis
100 gr wortel
6 siung bawang putih
8 siung bawang merah
1 sdm saus tiram
1 sdm kecap asin
½ sdt minyak wijen
¼ sdt garam
¼ sdt merica
1 sdm gula pasir
Bahan telur:
3 butir telur
⅛ sdt garam
⅛ sdt merica
Bahan saus aci:
100 gr tepung tapioka
750 ml air
50 gr gula merah
⅛ sdt garam
Bahan pelengkap:
Cabai rawit hijau
Sambal bangkok
Lainnya:
Minyak goreng Fortune
Langkah:
1. Potong kecil-kecil jamur, wortel, dan buncis kemudian haluskan bawang putih dan iris bawang merah
2. Kocok telur dengan garam dan merica kemudian panaskan sedikit Minyak Goreng Fortune masak telur sambil diaduk, sisihkan
3. Panaskan sedikit Minyak Goreng Fortune, tumis jamur hingga kecokelatan lalu masukkan wortel dan buncis, tumis hingga matang, sisihkan
4. Di wajan yang sama panaskan sedikit Minyak Goreng Fortune lalu tumis bawang merah hingga wangi
5. Masukkan bawang putih, tumis hingga harum lalu masukkan ayam giling, masak hingga matang
6. Masukkan telur dan sayuran, aduk rata kemudian tambahkan kecap asin, saus tiram, garam, merica, gula pasir, dan minyak wijen, aduk rata
7. Untuk saus kental, dalam keadaan api mati campurkan air, tepung tapioka, dan gula merah, nyalakan api kemudian tambahkan garam, masak hingga mengental dan mengkilap, sisihkan ke dalam mangkuk, dinginkan
8. Siapkan kulit spring roll, oles saus kental di bagian bawah kulit spring roll lalu masukkan isian dan gulung
9. Panaskan Minyak Goreng Fortune, goreng lumpia di api sedang beberapa saat hingga kuning keemasan, tiriskan
10. Lumpia ayam jamur siap disajikan

Chicken Mushroom Spring Rolls Recipe (yield 20 pcs)
Ingredients:
20 pc Spring Roll skin, large
Filling ingredients:
350 g ground chicken
150 g Shiitake & Champignon mushroom
150 g green bean
100 g carrot
6 clove garlic
8 pc shallot
1 tbsp oyster sauce
1 tbsp soy sauce
½ tsp sesame oil
¼ tsp salt
¼ tsp pepper
1 tbsp sugar
Egg ingredients:
3 pc eggs
⅛ tsp salt
⅛ tsp pepper
Thick Sauce ingredients:
100 g tapioca flour
750 ml water
50 g palm sugar
⅛ tsp salt
Condiments:
Green Thai chili
Bangkok Sambal
Others:
Fortune frying oil
Steps:
1. Dice the mushroom, carrots, and green beans into small pieces. Mince the garlic and slice the shallots.
2. Whisk the eggs with salt and pepper. Heat a little Fortune Oil and cook the eggs while stirring. Set aside.
3. Heat a little Fortune Oil. Sauté the mushroom until browned, then add carrots and green beans. Stir fry well and set aside.
4. In the same pan, heat a little Fortune Oil and sauté the shallots until fragrant.
5. Add garlic and sauté until fragrant. Then, add ground chicken and cook well.
6. Add the eggs and veggies. Stir well, then add soy sauce, oyster sauce, salt, pepper, sugar, and sesame oil. Mix well.
7. For the Thick Sauce, add water, tapioca flour, and palm sugar into a pan with the heat off. Then, turn the heat on and season with salt. Cook until it thickens and becomes shiny, then place in a bowl and let cool.
8. Prepare the Spring Roll skin and spread the Thick Sauce on the bottom. Add the filling and roll.
9. Heat Fortune Oil and fry the Spring Rolls on medium heat until golden. Set aside.
10. Chicken Mushroom Spring Roll is ready to serve.
