At the early stages, the procedures of making Ume Plum Vinegar is the same as making Honey Green Ume Plum Wine. The video includes more details of what I do before putting in the sugar.
Oxygen is not wanted when brewing wine, but it's the opposite of brewing vinegar. This may sound easy.
I've been making Ume Plum Vinegar for years. I tried many different ways. Sometimes I failed before making the vinegar. Sometimes I missed the right time to put mother of vinegar and failed. Once I succeeded in making the vinegar but it ended up with no plum taste. After trying and trying, I finally made the Green Ume Plum Vinegar with pleasing plum taste. I still felt very excited when I edited the video.
