Resep Ayam Goreng Kari (untuk 4-5 porsi)

Bahan:
800 gr ayam broiler, potong 14
1 butir telur
70 gr roux kari atau 2 sdm bubuk kari + 1 sdt garam
5 siung bawang putih
100 gr tepung tapioka
1 sdm cuka
1 sdt kaldu ayam bubuk
¼ sdt merica

Bahan pelengkap:
8 siung bawang merah
5 siung bawang putih
5 buah cabai keriting merah
5 buah cabai keriting hijau
6 buah cabai rawit merah
20 gr kemangi
1 batang daun bawang

Langkah:
1. Marinasi ayam dengan bawang putih halus, parutan roux kari, kaldu ayam bubuk, merica, cuka, dan telur, aduk rata kemudian masukkan tepung tapioka, aduk rata. Diamkan selama 1 jam
2. Geprek bawang merah, bawang putih lalu belah dua cabai rawit, potong cabai keriting hijau, cabai keriting merah dan daun bawang
3. Panaskan minyak, goreng ayam di api besar hingga struktur luar ayam terbentuk lalu kecilkan api, goreng hingga matang, tiriskan
4. Goreng bawang merah dan bawang putih, aduk lalu masukkan cabai rawit, cabai keriting merah, cabai keriting hijau, daun bawang, dan daun kemangi, tiriskan
5. Ayam goreng kari siap disajikan

Curry Fried Chicken Recipe (yield 4-5 servings)

Ingredients:
800 g broiler, chopped into 14 pieces
1 pc egg
70 g curry roux or 2 tbsp curry powder + 1 tsp salt
5 clove garlic
100 g tapioca flour
1 tbsp vinegar
1 tsp chicken powder
¼ tsp pepper

Add-ons:
8 pc shallot
5 clove garlic
5 pc red curly chili
5 pc green curly chili
6 pc red Thai chili
20 g lemon basil
1 pc green onion

Steps:
1. Marinate the chicken with minced garlic, grated curry roux, chicken powder, pepper, vinegar, and egg. Mix well, then add tapioca flour. Mix well and marinate for 1 hour.
2. Pound the shallots and garlic. Halve the Thai chili. Slice the red curly chili, green curly chili, and green onions.
3. Heat the oil. Fry the chicken on medium-high heat until the outer structure is formed. Then, lower the heat and fry until they’re thoroughly cooked. Set aside.
4. Fry the shallots and garlic. Stir, then add Thai chili, red curly chili, green curly chili, green onions, and lemon basil. Set aside.
5. Curry Fried Chicken is ready to serve.
