I made a chiffon cake with Assam Tea milk tea, which is perfect for tapioca.
The gentle sweetness of the milk chocolate and the chewy tapioca combined with the cream to make a really delicious chiffon cake.

[ Ingredients - Chiffon Cake ]
- Assam Tea Chiffon Cake - (17cm)
A - Flour: 80g
A - Baking powder: 3g
A - Tea leaves (Assam): 5g
B - Egg whites (L): 3 egg whites
B - Granulated sugar: 35g
C - 3 egg yolks (L)
C - Granulated sugar: 35g
D - Milk: 50ml (use 120ml and 80g is fine)
D - Tea leaves (Assam): 10g
Salad oil: 50ml
[ Making ]
1. grind the tea leaves into a fine powder.
2. divide the eggs into yolks and whites.
3. whisk the granulated sugar into 3 egg yolks.
4. mix the salad oil and 80g of the milk tea made in 1.
5. mix in the flour.
6. make a meringue out of semi-frozen egg whites with granulated sugar.
7. half discarded meringue in 7.5 and mix the rest without crushing the air bubbles.
8. preheat the oven and bake at 170°C for around 35 minutes.
9. if it looks like it's going to burn, put the aluminum lid on after 10 minutes or so.
10. take it out and immediately turn it upside down using a bottle of wine to cool it down

- Ganache cream -
38% milk chocolate: 50g
35% whipped cream: 25g
[ Making ]
1. chop the chocolate.
2. put the cream in 1. boil the cream in the microwave.
3. let it sit for a while to convey the temperature and then mix to emulsify
4. brush on the chiffon dough

- Tapioca.
Black tapioca (dried): 70g
[ Making ]
Boil the dried black tapioca in more water for 60-90 minutes.

- Whipped cream -
42% fresh cream: 120g
Granulated sugar: 10g
[ Making ]
First, add all the granulated sugar and whip while applying ice.
