Blue And White Snowskin Mooncakes | 青花瓷月饼
Blue And White Snowskin Mooncakes that I made recently. The white dough is marbled with majesty blue from blue pea flower, resemble blue and white porcelain produced during Ming and Qing dynasties.
喜欢这个带有中国风的青花瓷月饼。做起来简单,不需要烤箱,夜深人静时独自把一颗颗漂亮的月饼压出来,有说不出来的满足感。
White Snowskin:
1)Glutinous Rice Flour – 25g
2)Rice Flour – 25g
3)Wheat Starch – 15g
4)Condensed Milk – 20g
5)Milk – 110g
6)Cooking Oil – 15g
Blue Snowskin:
1)Glutinous Rice flour – 25g
2)Rice Flour – 25g
3)Wheat starch – 15g
4)Condensed Milk – 20g
5)Dried Blue Pea Flowers – 110g
6)Cooking Oil – 15g
Others:
1)Glutinous Rice Flour – 2 tbsp (Cooked Flour)
2)Lotus Seed Paste – 200g (25g X 8 portions)
3)Chocolate Lotus Seed Paste – 200g (25g X 8 portions)
*Cooked Flour: Stir fry 2 tbsp of glutinous rice flour in a non stick pan, low heat and without oil. The flour is cooked when it becomes light, slightly yellowish and doesn’t taste raw.

白色冰皮:
1)糯米粉 – 25g
2)沾米粉 – 25g
3)澄粉 – 15g
4)炼奶 – 20g
5)牛奶 – 110g
6)食用油 – 15g
蓝色冰皮:
1)糯米粉 – 25g
2)沾米粉 – 25g
3)澄粉 – 15g
4)炼奶 – 20g
5)蝶豆花水 – 110g
6)食用油 – 15g
其他:
1)糯米粉 – 2 tbsp(熟粉)
2)莲蓉馅 – 200g (25g X 8 份)
3)巧克力莲蓉 – 200g (25g X 8 份)
熟粉:把2汤匙的糯米粉放入不粘锅,小火,干炒直糯米粉变轻,颜色有点黄,吃起来没有生粉的味道就可以了。
