非常推荐的香蕉核桃蛋糕。配方加了优格,蛋糕体湿润松软,但又不过于软塌。烤香的核桃也让蛋糕的口感变得更丰富。喜欢核桃是因为它有补脑的功效,你也可以用胡桃或巧克力豆取代,他们都跟香蕉很搭。

我没有长方形的蛋糕模,所以用吐司模来做。吐司模的宽度相对较宽,所以蛋糕的中间会显得略平坦。我试过用铝箔纸的长方形模制作,视觉效果会比较好。影片中在蛋糕糊中间挤一条软化牛油是想让蛋糕裂口的位置在中间,不介意裂口位置偏左或偏右的可以省略这个步骤。

材料:
1) 低筋面粉 - 200g
2) 苏打粉 - 1/2 tsp
3) 泡打粉 - 1 tsp
4) 牛油 - 120g (室温软化)
5) 细砂糖 - 50g
6) 棕糖 - 50g
7) 蛋 - 2 (A 蛋,室温)
8) 香草精 - 1 tsp
9) 香蕉 - 2 条,200g
10) 希腊优格 - 120g
11) 烤香的核桃 - 70g(切碎)

做法:
1) 低筋面粉,苏打粉和泡打粉拌均,放在一旁备用。
2) 香蕉压成泥,放置一旁备用。
3) 把牛油,细砂糖和棕糖搅打到颜色变浅,体积明显变大,大概3-4分钟。
4) 分次加入鸡蛋,快速搅打均匀后才加入另一颗鸡蛋。
5) 加入香蕉泥和香草精,搅打拌均。
6) 筛入一半粉类,用刮刀拌均。
7) 倒入希腊优格,拌均。
8) 加入核桃碎和筛入另一半粉类,拌均。
9) 吐司模铺烘培纸,把蛋糕糊倒入模里。
10) 预热烤箱350°F/175°C, 烤50分钟或直到烤熟。牙签插入蛋糕中间,拿出来时没有蛋糕糊沾粘就是熟了。

**可以用中筋面粉取代低筋面粉,中筋面粉做出来的蛋糕略扎实,也很好吃。
**希腊优格可以用原味的优格或酸奶油取代。
**用已经长斑点的香蕉,比较甜,香气也比较足。
**加入蛋糕糊的核桃要事前烤香。如果是撒在蛋糕上面装饰用生核桃就可以。胡桃和巧克力跟香蕉也很搭,大家随自己的喜好让蛋糕的口感更丰富。
**我用12两的吐司模,也可以用其他的长方形模,或做成小蛋糕。

Ingredients:

11) Toasted Walnut - 70g(chopped)

Instructions:
1) Mix together cake flour, baking soda and baking powder, set aside.
2) Mash bananas with fork, set aside.
3) Cream together butter and sugars until light and fluffy, about 3-4 mins.
4) Beat in eggs, one at a time at high speed until well-combined.
5) Add in mashed banana and pure vanilla extract, mix to combine.
6) Sifted in half of the flours, fold gently.
7) Add in Greek yogurt, mix well.
8) Add in toasted walnut and sift in remaining flours, fold gentle.
9) Line bread toast mold with parchment paper, pour cake batter into the prepared mold.
10) Bake in preheated oven, 350°F/175°C, for 50 mins or until the toothpick inserted in the center and comes out clean.

**Feel free to replace cake flour with all-purpose flour. All purpose flour will yield slightly chewy texture, while cake made with cake flour is lighter and softer.
**You can replace Greek yogurt with plain yogurt or sour cream.
**Use ripe or over ripe banana for baking, they are sweeter and have more flavor.
**Toast the walnut before adding to the batter. Use raw walnut if you want to sprinkle on top of the batter. You can replace walnut with pecan or chocolate, they are perfect for banana cake.
**I use toast bread mold for the cake, you can use loaf pan or make it into cupcakes.
