This Gluten-Free apricot almond cake is a delightful treat, a perfect fusion of naturally sweet apricots and the nutty goodness of almonds. It is simple and elegant and is perfect for any occasion.
Ingredients:
3-4 apricots
1 tablespoon cornstarch, for apricots
3 medium eggs
1/4 cup(35 g) sweetener(stevia or your choice)
1/2 teaspoon vanilla extract
1 cup(100 g) almond flour
2 tablespoons of cornstarch, for the cake batter
a pinch of salt
2 tbsp sweetener(stevia or your choice)
bake at 340F (170C) for 35-40 minutes
