■ Thick pancake
1 Whole egg
28g Granulated sugar
70g Bread flour
3g Baking powder
45ml Milk
[How to make thick pancakes]
1. Mix sugar and egg with a whipper
2. Put baking powder and strong flour into sieve 1 and mix with a whipper.
3. Add milk and mix
4. Oil the frying pan and cover with a low heat.
■ Custard Cream (Creme Patissiere)
3 pcs. Egg yolks (around 60g)
40g Granulated sugar
20g Soft flour
200g Milk
10g Granulated sugar
1/2 Vanilla
20g Unsalted butter
[How to make custard cream]
1. Prepare egg yolk, add granulated sugar, mix and blanch
2. Sift the soft flour and mix
3. Add 10g of granulated sugar to milk and mix
4. Cut the vanilla in half, cut the center and put the seeds in the milk
5. Warm milk to about 60 ℃
6. Add milk little by little to the yolk liquid and mix with a whipper
7. Once mixed, strainer into a pot using a strainer and return to medium heat
8. Mix quickly while boiling to avoid burning
9. Remove from heat and mix with butter
10. Spread the cream on a vat, quench it in a freezer and store it in the refrigerator
11. Soften with a whipper before using the cream
