Pandan lotus paste is one of my favorite mooncake fillings. I love the sweet aroma as well as its green of jade. The green color is extracted from a plant, known as pandan. It's used wisely in South East Asia in both savory and sweet dishes.
I used frozen leaves in this video because it's rather difficult for me to buy the fresh pandan leaves. The frozen leaves are imported from Thailand and Vietnam. I prefer to to use the leaves from Thailand because the pandan liquid extracted is more green
.
斑斓莲蓉是我很爱的月饼馅之一,很喜欢它的香气和翠绿的颜色。其实自己炒月饼馅不难。量不多的话,只要莲蓉泥的水分不大,这个食谱在30分钟左右就可以炒好。
视频里用的斑斓叶是冷冻的。我在国外,不容易买到新鲜的斑斓叶,所以只能用冷冻的。这里冷冻的斑斓叶是从泰国和越南进口。越南的很香,但斑斓汁的颜色很淡,可以说几乎没有,所以要做斑斓类的甜点用泰国斑斓叶会比较适合。

3)Cooking Oil - 100g
4)Maltose - 60g
5)Pandan Leaves - 15
6)Water - 100g
7)Wheat Starch - 10g
