In the latest episode of Dessert Person, Claire Saffitz makes her easiest cake recipe. She says there is one recipe nearest and dearest to her heart, and it's this one for simple Poppy Seed Almond Cake. It's been a family favorite of her's for decades, and still the easiest and most perfect cake Claire knows how to make. Saying it's proof of the truism that simple is often the best, but that we should try it and see for ourself, so in this video we are doing just that!

Ingredients for making the easiest cake:
Cake ingredients:
Neutral oil and all-purpose flour for the pan
3 cups all-purpose flour (13.8oz / 390g)
2 1/3 cups sugar (16.4 oz/ 465g)
2 tbsp poppy seeds (0.6 oz / 17g)
1 1/2 tsp baking powder (0.21 oz / 6g)
1 tsp kosher salt (0.11 oz / 3g)
3 large eggs (4.3 oz / 150g)
1 1/3 cups neutral oil, such as vegetable or grapeseed (10.2 oz/ 288g)
1 1/2 cups whole milk (12.7oz / 360g)
1 1/2 tsp vanilla extract
1 1/2 tsp almond extract

Glaze ingredients:
3/4 cup powdered sugar (3.2 oz /90g)
1/4 cup orange juice (2 oz / 57g)
1/2 tsp vanilla extract
1/2 tso almond extract
2 tsp butter, melted

Instructions for making Claire Saffitz's easiest cake:
- The recipe calls for a bundt cake pan but according to Claire if you don’t have one you can just use 2 regular cake pans instead
- Drizzle a little neutral flavoured oil like vegetable or grapeseed oil into the cake pan
- Not much, just enough so you can then brush the entire pan including the inside ring with a thin coat of oil
- Next sprinkle flour into the pan, this will stick to the oil to make it easier to remove the cake later
- Tap the flour around the pan so there’s a fairly even coating
- Set that aside while you make the batter
- In a bowl, add 3 cups of flour, 2 1/3 cups of granulated sugar, poppy seeds, baking powder, kosher salt, 3 room temperature eggs, more neutral oil, room temperature whole milk, almond extract and vanilla extract
- We used an electric hand mixer to combine all the ingredients and we mixed on medium for about 3 minutes to make sure the batter was really smooth
- The next step is just to pour your batter into the prepared cake pan and give it a little shake to even out the top before popping it in a preheated 350 degree oven for 80-90 minutes
- The cake was still very hot so let it cool in the pan for about 15 minutes
- While you wait, prepare a glaze for the cake by combining powdered sugar, freshly squeezed and strained orange juice, vanilla extract, almond extract and a little melted butter
- Whisk it all together until the sugar has dissolved into the liquid then set aside while you unfold your cake
- To do this, gently run a pallet knife around the edge the cake pan
- Place a rack over the top of the cake then carefully flip it over and you should be able to pull the pan off of the cake fairly easily
- The cake should still be warm but not hot at this point
- Next poke holes all over the top and sides of the cake, this will help the glaze to seep into the cake and make it really delicious
- Use a pastry brush to generously brush the top, sides and inside of your cake then let it cool completely before slicing it
