Calling all the milk tea lovers to my new creation - Brown Sugar Milk Tea Mooncakes (*^▽^*) I bring up of milk tea flavor using instant brown sugar milk tea powder. It makes the whole process a lot easier without compromising on taste. The outer layer is tender and slightly chewy, filled with creamy milk tea custard, let's say 'cheers' to this mooncake!!

无意中喝到很好喝的即溶黑糖奶茶,当下就一股脑想做黑糖奶茶月饼。这次尝试用低筋面粉取代澄粉,发现效果还不错哦!!用澄粉的冰皮比较有Q,皮也比较有剔透的感觉。用低筋则是没那么快老化,放在冰箱四天了口感还是可以。

Ingredients For Filling:
1)Eggs - 2
2)Sugar - 50g
3)Milk - 55g
4)Whipping Cream - 55g
5)Cake flour - 35g
6)Corn Starch - 15g
7)Brown Sugar Milk Tea Powder - 20g
8)Butter - 25g

Ingredients For Skin:
1)Glutinous Rice Flour - 30g
2)Rice Flour - 30g
3)Cake Four - 15g
4)Sugar - 30g
5)Milk - 150g
6)Mizuame - 20g
7)Brown Sugar Milk Tea Powder - 20g
8)Cooking Oil - 20g

*How to make Cooked Flour: Stir fry 2 tbsp of glutinous rice flour in a non stick pan, low heat and without oil. The flour is cooked when it becomes light, slightly yellowish and doesn’t taste raw.

内馅材料:
1)蛋 - 2
2)白糖 - 50g
3)牛奶 - 55g
4)鲜奶油 - 55g
5)低筋面粉 - 35g
6)玉米淀粉 - 15g
7)黑糖奶茶 - 20g
8)牛油 - 25g

冰皮材料:
1)糯米粉 - 30g
2)粘米粉 - 30g
3)低筋面粉 - 15g
4)白糖 - 30g
5)牛奶 - 150g
6)水饴 - 20g
7)黑糖奶茶 - 20g
8)食用油 - 20g

熟粉/糕粉的做法:把2汤匙的糯米粉放入不粘锅,小火,干炒直糯米粉变轻,颜色有点黄,吃起来没有生粉的味道就可以了。
