Lotus Seed Paste | Make Two Flavors With One Paste!! 莲蓉馅 | 一个馅料 两种口味!!
A very smooth and silky lotus seed paste. It has a right sweetness, easy to shape, easy to work with and doesn’t dry out easily. Besides the original paste, just add an extra step to get another flavor - Chocolate Lotus Seed Paste. Two flavors with one paste, hope you like it^_^
很好用的配方。莲蓉馅除了口感好,甜度适中,更让我满意的是它的的延展性非常好,容易朔型,放置冰箱几天也不会发干。除了原味莲蓉,简单加工就可以变出另一个很受小朋友喜欢的巧克力莲蓉口味哦!希望你们喜欢。
Ingredients:
1)Dried Lotus Seed – 300g
2)Sugar – 180g + 40g
3)Cooking Oil – 115g + 25g
4)Maltose – 80g
5)Baking Chocolate – 40g
*Total final weight is about 1kg. Chocolate Lotus Seed Paste -440g;Lotus Seed Paste – about 550g
*You can skip caramelizing the sugar if desired, the paste will be pale color. However I love how this step creates richer taste and beautiful hue golden paste color.

材料:
1)干莲子 – 300g
2)白糖 – 180g + 40g
3)食用油 – 115g + 25g
4)麦芽糖 – 80g
5)巧克力 – 40g
*成品约1kg。巧克力莲蓉-440g;原味莲蓉 – 550g左右
*不想熬糖色的可以省略步骤5,做出来的就是白莲蓉馅;而熬糖色煮出来的是红莲蓉。
