Hi Tomodachis!

We are continuing our culinary adventure and checking out Thailand today!
We will be watching Pailin (Pai) From Hot Thai Kitchen making her own green Thai curry recipe !
This classic Thai food can be found from high end restaurants to food courts to street food and is delicious paired with jasmine rice or roti.
The paste for this delicious curry contains all of the classic ingredients such as lemongrass and galangal with basil and green chiles giving it its unmistakable green color. In addition, kaffir lime leaves, palm sugar and coconut milk finish off the rest of this curry as with many other Thai-style curries.
We know that in the US, they like to add bell pepper garnish to this dish, but we of course prefer the fiery heat of some read chiles.
This dish can be prepared with a few different vegetables and proteins, but chicken and eggplant is a pretty classic combination for green curry.
