Swan Shaped Crystal Dumplings 天鹅水晶饺, 小撇步蒸出昂头的天鹅
These swan shaped crystal dumplings is not difficult to make. Just make sure you don’t stretch the skin while shaping so the skin wouldn’t break.
Ingredients:
1)Wheat Starch – 75g
2)Potato Starch – 25g
3)Salt – 1/4 tsp
4)Boiling Water – 110g
5)Cooking Oil – 1 tsp
6)Nature Food Color
7)Black Sesame
Fillings:
1)Minced Chicken – 100g
2)Carrot – small piece, chopped
3)Minced garlic and ginger
4)Egg Whites – 1/3
5)Scallion – thinly sliced
Seasoning: cooking wine, soy sauce, sesame oil, sugar and white pepper.

简易的天鹅造型水晶饺。造型的制作过程不难,但澄粉和马铃薯淀粉的延展性不是很好,所以做的过程记得不要拉扯到皮,不然皮很容易被弄破和裂开。
这次我用马铃薯淀粉取代木薯粉做水晶饺。做出来的皮口感比较柔软,木薯粉做的皮就比较Q。很多港式虾饺都会用到马铃薯淀粉,喜欢那种口感的皮可以试一试这个食谱。
材料:
1)澄面粉 – 75g
2)马铃薯淀粉 – 25g
3)盐 – 1/4 tsp
4)滚水 – 110g
5)食用油 – 1 tsp
6)天然色素
7)黑芝麻
馅料:
1)鸡肉绞 – 100g,
2)胡萝卜 – 一小块,切碎
3)蒜泥和姜末 – 适量
4)蛋清 – 1/3个
5)青葱 – 适量,切成细小
调味料:料酒,生抽,麻油,白糖和白胡椒粉。
