Resep Seafood Saus Padang (untuk 6-7 porsi)
Bahan:
350 gr udang, belah
250 gr cumi, potong
1 kg kepiting
2 buah jagung, potong, rebus
Bahan marinasi cumi:
1 sdt baking soda
1 sdm cuka
1 sdt garam
Bahan bumbu halus:
10 siung bawang putih
10 siung bawang merah
8 buah cabai rawit merah
Minyak secukupnya
Bahan lainnya:
3 batang daun bawang, potong
3 jempol jahe
6 sdm saus tiram
6 sdm saus tomat
6 sdm saus sambal
2 sdm kecap ikan
1 sdm seasoning sauce
800 ml air
3 lembar daun salam
4 lembar daun jeruk
1 buah bawang bombai, iris
1 ½ sdm margarin
1 sdm gula pasir
½ sdm kaldu bubuk
2 sdm maizena

Langkah:
1. Potong cumi lalu marinasi dengan baking soda, cuka, dan garam, diamkan selama 10 menit lalu bilas
2. Belah punggung udang lalu potong bagian tajam pada udang, bilas
3. Haluskan bawang putih, bawang merah, cabai rawit, dan minyak dengan blender kemudian tumis hingga wangi
4. Masukkan jahe yang telah di geprek, daun salam dan daun jeruk, tumis hingga wangi dan matang
5. Masukkan kecap ikan, seasoning sauce, saus tiram, saus tomat, saus sambal, daun bawang bagian putih, dan bawang bombai, aduk rata
6. Tambahkan air dan larutan maizena, aduk rata lalu masukkan gula, kaldu bubuk dan margarin
7. Masukkan kepiting lalu masak dengan keadaan tertutup
8. Panaskan minyak, goreng cumi dan udang selama 30-60 detik, tiriskan
9. Masukkan jagung, sisa daun bawang, cumi, dan udang yang telah digoreng, masak hingga mendidih kemudian matikan api
10. Seafood saus padang siap disajikan dengan nasi sebagai pelengkap

Seafood with Padang Sauce (yield 6-7 servings)
Ingredients:
350 g shrimp, deveined
250 g squid, slice
1 kg crab
2 pc corn, sliced, boiled
Squid marinating ingredients:
1 tsp baking soda
1 tbsp vinegar
1 tsp salt
Blended Spices ingredients:
10 clove garlic
10 pc shallot
8 pc red Thai chili
Oil, as needed
Others:
3 pc green onions, sliced
3 thumb ginger
6 tbsp oyster sauce
6 tbsp tomato sauce
6 tbsp chili sauce
2 tbsp fish sauce
1 tbsp seasoning sauce
800 ml water
3 pc bay leaf
4 pc lime leaf
1 pc onion, sliced
1.5 tbsp margarine
1 tbsp sugar
½ tbsp stock powder
2 tbsp cornstarch
Others:
Rice
Steps:
1. Slice the squid and marinate it with baking soda, vinegar, and salt. Marinate for 10 minutes, then rinse.
2. Devein the shrimp and trim the sharp parts. Rinse.
3. Blend the garlic, shallots, Thai chili, and oil. Sauté until fragrant.
4. Add the pounded ginger, bay leaves, and lime leaves. Sautè through until fragrant.
5. Add fish sauce, seasoning sauce, oyster sauce, tomato sauce, chili sauce, white part of green onions, and onions. Stir.
6. Add a mix of water and cornstarch. Stir, then add sugar, stock powder, and margarine.
7. Add the crab in and cover the pan to cook.
8. Heat some oil. Flash fry the squid and shrimp for 30-60 seconds. Set aside.
9. Add the corn, the rest of the green onions, as well as the fried squid and shrimp. Bring to a boil, then turn the heat off.
10. Seafood with Padang Sauce is ready to serve with rice on the side.
