我今天复刻的这道菜我给它起名叫冰火蛋,因为它是由温软的蛋黄和冰凉的奶油组成的,英文名也叫hot and cold egg。这道菜是米其林三星饭店Arpège的Alain Passard厨师原创的菜谱。
食材:
可生食鸡蛋(室温)4个,新鲜韭菜(或荷兰芹30g),粗盐少许,黑胡椒少许,柠檬皮2g,法式酸奶油(或美式酸奶油)60g,淡奶油60g,蜂蜜少许,干罗勒叶碎少许(装饰用)
4 fresh extra large eggs, fresh chives 30g, pinch of coarse salt, pinch of pepper, meyer lemon peel 2g, creme fraiche (or sour cream) 60g, whipping cream 60g, honey, dried basil (decorational)
