分享这款容易上手又好吃的上海月饼。饼皮酥松,有着浓郁的奶香味,搭配芋头馅和咸香的肉松蛋黄,美味不能言语。
上海月饼是属于比较西式的月饼。饼皮是曲奇的配方,制作不需要特别的技巧。内馅可以随意,红豆沙,莲蓉,芋泥什么的都跟上海月饼很搭。至于肉松和咸蛋黄的部分,没试过的朋友强烈建议你试一试,甜中带咸的月饼真的很好吃。
Shanghai mooncakes have a buttery and crumbly crust. It goes well with the combinations of sweet yam paste and savory salted egg yolk pork floss fillings.
Skin Ingredients 饼皮材料:
1)Butter 牛油– 50g
2)Icing sugar 糖粉 – 10g
3)Sugar 白糖 – 10g
4)Cake flour 低筋面粉 – 75g
5)Evaporated milk 淡奶 – 2 tsp
Fillings 馅料:
1)Cooked salted egg yolk 熟咸蛋黄 – 2
2)Pork floss 肉松 – 10g
3)Cooking oil 食用油 – 2 tsp
4)Taro paste 芋头馅 – 154g
5)Egg wash 表面装饰:1 egg yolk 蛋黄 + 1/4 tsp water 水,black sesame黑芝麻
*配方可以做7个50g的上海月饼。饼皮 : 馅料的比列是 4:5, 也就是20g 皮和25g的馅。
*The ratio for skin : filling is 4:5, which means 20g of skin和 25g of filling。
*我用冷冻熟的咸蛋黄,每颗10g左右。也可以用生的咸蛋黄,但要事前烤熟或蒸熟。
*I used frozen cooked salted egg yolk, about 10g each. You can use raw salted egg yolk, just bake or steam until they are cooked before using them.
*肉松可以剪细一些,容易跟咸蛋黄按成团,方便包馅。喜欢有点口感的可以省略这个步骤,但是馅会比较松散。
*Cut the pork floss with scissors until fine. It can be mixed with salted egg yolk and press them into a firm dough this way, a lot easier to wrap into taro paste. Omit this step if you prefer to have the bite of pork floss’texture in the fillin
