Volcano Rice

Ingredients for Fried Chicken:
Boneless chicken 1 kg
Yogurt 1 cup
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp / to taste
Cumin powder 1 tbsp
Coriander powder 1 tsp
Paprika powder 1 tbsp
Lemon juice 2 tbsp
All-purpose flour 1 cup
Corn flour 1/2 cup
Oil (for frying) as required

Ingredients for Fried Rice:
Oil 1/3 cup
Garlic (chopped) 1 tbsp
Capsicum (chopped) 1 cup
Carrot (chopped) 1 cup
Cabbage (Chopped) 1 cup
Red chili flakes 1 tsp
Soy sauce 2 tbsp
Chili sauce 2 tbsp
Salt 1 tsp / to taste
Black pepper powder 1 tsp
Green onion (chopped) as required
Boiled rice 2 cups

Ingredients for orange sauce:
Mayonnaise 1/2 cup
Ketchup 1 cup
Mustard paste 2 tbsp
Sweet chili sauce 2 tbsp
Black pepper powder 1 tsp
Salt 1/2 tsp / to taste

Ingredients for Red sauce
Dry red whole chilies 10-12
Water 1 ½ cup
Oil 1/3 ccup
Garlic (chopped) 1 tbsp
Ginger (chopped) 1 tbsp
Red chili paste 1/2 cup
Ketchup 1 cup
Chili sauce 2 tbsp
Soy sauce 1 tbsp
Sugar 1 tsp

Ingredients for Black sauce:
Garlic (Chopped) 1 tbsp
Oil 2 tbsp
Chicken stock 1 cup
Dark soy sauce 1 tbsp
Soy sauce 1 tbsp
Chili sauce 1 tbsp
White pepper powder 1 tsp
Slurry (corn flour 2 tbsp + water 1/4 cup)

Ingredients for Assembling:
Fried rice
Fried chicken
Black sauce
Red sauce
Orange sauce
Green onion (Chopped) as required

Directions for Fried Chicken Preparation:
1. In a bowl add chicken, yogurt, red chili powder, turmeric powder, salt, cumin powder, coriander powder, salt, lemon juice, corn flour, all-purpose flour and mix well.
2. In wok heat oil and add marinated chicken, deep fry until chicken is fully done and golden brown in color. Your Fried Chicken is ready. Set aside.
Directions for Fried Rice Preparation:
3. In a wok heat oil and and add garlic, cook for a minute.
4. Add capsicum, carrot, cabbage and cook for 2-3 minutes. Now add soy sauce, chili sauce, red chili flakes and mix well.
5. Add boiled rice and toss well over high flame for 1-2 minutes. Lastly, add salt, black pepper, green onion and mix well. Your Fried Rice is ready. Set aside.
Directions for Orange Sauce Preparation:
6. In a bowl add ketchup, mayo, black pepper, salt, sweet chili sauce, mustard paste and mix well. your orange sauce is ready. Set aside.
Directions for Red Sauce Preparation:
7. In a pan heat water and add dried red chilies. Boil until soft. Transfer into a jar and blend until soft paste has formed. Set aside.
8. In a pan heat oil and garlic, ginger and cook for a minute.
9. Add red chili paste and simmer for 1-2 minutes. Add ketchup and mix well.
10. Add chili sauce, soy sauce and sugar and cook for 2-3 minutes. Your Red Sauce is ready. Set aside.
Directions for Black Sauce Preparation:
11. In a pan heat oil and add garlic, cook for a minute.
12. Add chicken stock, dark soy sauce, chili sauce, white pepper and cook for a minute.
13. Add slurry and cook until thick in consistency. Your Black sauce is ready.
14. In a dish add a layer of fried rice, oranges sauce, red sauce, black sauce and garnish with green onion. Your Volcano Rice is ready to serve.
Preparation time: 15 mins
Cooking time: 30-40 mins
Servings: 4-5
