The fat is used as a coagulant in the sauce, and the taste of the fat is also part of the seasoning of the sauce. I made two versions, the first one used brown butter or clarified butter. The second version uses coconut milk. I prefer the combination of five-spice salted egg and coconut flavour, which has the flavour of East Asian and Southern cuisine.
