Yam bean filling (沙葛馅):
500g yam bean / sengkuang , skinned and shredded (500克沙葛,去皮,切丝)
1 carrot, shredded (1 条红萝卜,切丝)
3 tbsp dried shrimp, soaked and chopped (3汤匙虾米,浸软,剁碎)
2 tbsp chopped shallot and garlic (2汤匙葱蒜茸)
2 tbsp cooking oil (2汤匙油)

Seasoning (调味料):
3/4 tsp salt (盐)
2 tsp sugar (糖)
1 tbsp light soy sauce (生抽)
1 tbsp oyster sauce (蚝油)
1 tsp ground pepper (胡椒料)
1/2 tsp dark soy sauce (黑酱油)
100ml water (水)
1 tsp corn starch (玉米粉)
1 tbsp water (水)

Ingredients for skin (皮料):
120g (1 cup) tapioca starch (木薯粉)
120g (1 cup) wheat starch /tang mien fun(澄面粉)
1/2 tsp salt (盐)
350ml boiling water (滚水)
3 tbsp oil (油)

Fried garlic oil for glazing
适量炸蒜油,抹皮用
