Simple Homemade Sourdough Bread 酸种面包

Ingredients:

75% 450g Japanese bread flour (面包粉)
8.4% 50g wholemeal flour (全麦面粉)
8.4% 50g T55 French flour ( 法国面粉)
8.4% 50g spelt flour ( 斯佩尔特小麦粉)
20% 120g levain (酸种)
77% 460g water (水)
2% 12g sea salt (海盐)

50g toasted black and white seeds (炒香黑白芝麻)

Total bulk 4 hours at 30°C

Baked in Dutch oven 250°C for 25 minutes covered, 220°C 15 minutes uncovered
