I M P O R T A N T ⚠️ enjoy these tacos as soon as they leave the griddle so they don’t get soft, or drain as much of the consomé off the barbacoa so the tacos don’t get soaked
TIP: enjoy every bite!!! Yes they are not the healthiest but UNA VEZ AL AÑO NO HACE DAÑO 😇🤭
Ingredients:
6 lbs of your favorite cut of meat; head, tongue, cheek whatever YOUR choice is
I LOVE TO USE
1 lb beef short ribs, 3 lbs beef chuck roast, 2 lbs beef chuck tender roast
1 white onion
7 garlic cloves
4 bay leaves
A bundle of cilantro
Salt I used 2 1/2 tbsp and 1 tbsp crush black pepper
For the adobo sauce
10 New Mexico chile pods or guajillo
2 chile anchos
3 chipotle peppers in adobo sauce
1/2 onion
5 garlic cloves
1 inch cinnamon stick
10 all spice berries
8 whole cloves
1 1/2 tbsp peppercorn
1 tbsp cumin seeds
2 tsp oregano
2 tsp thyme
1/2 cup white distilled vinagre
10-12 cups broth
And Lard!!!!
For the salsa;
12 tomatillos
5 chile puya (less spicy than chile árbol)
Chile árbol I used 10
1 garlic cloves
Salt I used 2 tsp
1/2 cup water
1 serving of love 💕
