The best bars I’ve ever made. Lol:

Ingredients
3.5 cups thick rolled oats blended into a flour
3 cups walnuts
1.5 cup packed dates
2 cups coconut flakes
1 cup coconut flakes
2 tsp vanilla
1 tsp salt
3/4 cup raw cacao powder
1/2 cup coconut sugar

Blend oats and place into big bowl with the vanilla and salt.
Using a food processor pulse together walnuts, 1 cup of coconut flakes, and dates. Add that mixture to the oats.
Add 1 cup of water and mix everything together

In a clean blender, blend 2 cups of coconut flakes with 1 cup of water on high for 2 minutes. The milk should be pretty thick. Strain through a nut milk bag into a clean bowl. Add the cacao powder and coconut sugar and place over a pan with boiling water underneath. Allow it to melt into a thick chocolate syrup. Do not let it get too hot but simmer on medium heat until the chocolate is pretty thick. About 15-20 minutes. Stir constantly.

Place half the pay mixture into a parchment lined baking pan and press it down. Pour the chocolate on top and then put the rest of the oat mixture on top of the chocolate. Bake for 30 minutes at 325. Let cool in the fridge for a couple hours
