Today I'm making a light, fresh and delicious No-Bake Strawberry Shortcake Cheesecake! Perfect for summer, this no fuss, no bake and no-leftovers dessert is calling your name!

Ingredients:

For the Base:
600g crushed shortbread cookies
100g melted butter(salted or unsalted is fine)

For the filling:
500ml whipping (heavy) cream
150g white chocolate
250g softened cream cheese

To decorate:
(approx) 600g fresh, ripe strawberries
1 x 85g packet jelly or jello crystals
