準備材料:
五花肉1200克左右
八角2個 (約3-4克)
白胡椒粒20克
茴香籽30克
大紅袍花椒20克
月桂葉 3片
沖繩黑糖 40克(黑糖不會太甜,如果替換其他糖,要減量)
蒜頭 8瓣 約50-60克
醬油 75-80ml(隨個人口味增減)
清酒 400ml(不用酒,可以用碳酸水替代)
熱水 200ml(蓋過食材的量即可)
*不喜歡辣辣麻麻口感的人,花椒跟白胡椒都要減量
10. 可以在食材上多加50克的豬皮,增加黏稠口感,不過不喜歡的人就不用加了。
