2 cups Grady’s, chilled
3 tablespoons demerara sugar (heated until dissolved in ¼ cup grady’s)

Cream
8 ounces heavy cream
4 ounces mascarpone
Pinch of salt
½ teaspoon vanilla extract
2 tablespoons confectioners’ sugar
