Ingredients:
Chicken breast - 2 (around 430g)
Lemon - 1
Tapioca starch - 120g
Corn starch (for starch slurry)

Seasonings:
Salt - 1 tsp
Black pepper
Rice wine - 0.5 tbsp
Egg - 1

Lemon sauce:
Sugar - 4 tbsp
Water - 5 tbsp
Lemon juice - 4 tbsp
Plum sauce (Optional) - little bit

Starch slurry:
Corn starch - 2 tbsp
Water - 3.5 tbsp

Directions:
1. Roll the lemon against the chopping board.
2. Juice the lemon.
3. Slice chicken into thin strips.
4. Season the chicken.
5. Cover the bowl with cling film and let the chicken marinate for 30 minutes in the refrigerator.
6. Coat chicken strips with tapioca starch.
7. Lightly dust off any excess starch before frying.
8. Heat up a pan of oil. The chicken will be double fried.
9. When the oil is heated, add chicken strips.
10. Fry on medium heat for 4-5 minutes. Do not overcrowd the pan when frying.
11. Remove and drain excess oil on kitchen towel.
12. After frying all the chicken strips in small batches, heat up the oil on high heat.
13. Time for double fry!
14. Add the chicken strips into the pan and fry for 2 mins or until golden brown.
15. In another pan, prepare the lemon sauce.
16. Add sugar and water.
17. Heat up the mixture until the sugar is dissolved.
18. Add lemon juice and plum sauce. Stir to combine.
19. Adjust the thickness of the sauce gradually by adding ½ of starch slurry at a time.
20. Serve the lemon sauce separately or pour the sauce over the chicken.
21. Enjoy!!!
