The Pastry
680g / 24oz Plain or All-purpose flour
170g / 6oz Cold Butter
170g / 6oz Cold Lard
½ tsp Salt
200g Cold Water
1 egg (Wash)
The filling
1 Whole medium size chicken
150g / 5oz Shiitake mushrooms
250g / 8oz Chestnut mushrooms
200mls Single Cream
15g Corn Flour or Corn Starch (Thickening agent)
Salt & Pepper to Taste
