Chatpati Mutton Kaleji

Ingredients:
Kaleji 1 kg
Water (for soaking) 3 cups
Ginger garlic paste (for soaking) 2 tbsp
Vinegar (for soaking) 3 tbsp
Oil 1/2 cup
Onion (chopped) 1 cup
Tomatoes 1 cup
Ginger garlic paste 1 tbsp
Yogurt 1 cup
Red chili powder 2 tbsp
Turmeric powder 1/2 tsp
Tamarind pulp 1/2 cup
Chaat masala 1 tbsp.
Red chili flakes 1 tbsp
Cream 1/3 cup
Salt 1 tsp / to taste
Butter 1/4 cup

Directions:
1. In a bowl add water, ginger garlic paste, vinegar and whisk well. Add kaleji and soak it for 15 minutes.
2. Take out the kaleji and rinse it thoroughly with water. Set aside.
3. In a pan heat oil and onion, cook until translucent. Add tomatoes and cook until tomatoes get soft. Add ginger garlic paste and cook for a minute.
4. Add kaleji and cook until kaleji changes color.
5. Add red chili powder, turmeric powder, chaat masala, red chili flakes and cook until oil separates. Add tamarind pulp and cook for 2-3 minutes.
6. Add yogurt and cook for another 2-3 minutes. Now cover and cook over medium flame until kaleji is done.
7. Now add cream, salt and cook until kaleji is done.
Note: Add salt at the end because adding it in the beginning will prevent the liver (kaleji) from cooking properly.
8. Add butter and cook until butter melts.
9. Your Chatpati Kaleji is ready.
Preparation time: 10-15 mins
Cooking time: 25-30 mins
Servings: 4-5
