one day old tap water 500g / 2 cups
Sichuan peppercorn 2g /1 teaspoon
fennel seeds 2g /1 teaspoon
dried chili 2
pickling salt 15g /1 tablespoon (3% of water)
Avoid sunlight, at room temperature for 7 days.
