材料:雞腿2隻、枸杞半碗、米酒1碗、薑20片、麻油少許
1. 枸杞清洗後放入碗中,倒米酒浸泡
2. 熱鍋,倒入少許香油後,把雞肉放入鍋中煸炒
3. 切薑片,備用
4. 翻炒雞肉後,放入薑片煸香(利用雞油煸薑)
5. 加鹽入味,繼續翻炒雞肉至水分消失只剩雞油,再倒米酒(淹過雞肉)
6. 用火燒掉部分米酒酒精
7. 關火後,蓋上鍋蓋即可熄火,裝盤
8. 倒入1/3所需麻油滾煮,讓湯色變白
9. 淋上剩餘麻油,倒入步驟1準備的枸杞米酒,完成
