반죽에 들어가는 물은 밀가루가 반죽될 수 있는 최소한의 양만 들어가서
대략 3시간정도 반죽한다고 합니다. 그래서 만두피가 훨씬 탱탱하고
만두가 쉽게 터지지 않습니다.
이곳 육수는 다시마,디포리,보리새우,멸치,황두로 육수 우려내서
정말 깔끔하고 맛있습니다.
만두피를 스탬프로 찍으면 모서리 부분이 뭉개져 만두피가 붙어서
직접 칼로 만두피를 자르신다고 합니다.
