Quick Potato Curry

With a simple tomato base and common spices, the focus is definitely on the potatoes! although very easy to make, this quick potato curry is an ever-popular dish that is frequently made in most households, especially if there are children around.

Preparation Time: 10 minutes. Cooking Time: 7 minutes. Serves 4.

To be blended into a smooth paste (using a little water)
2 cups roughly chopped tomatoes
1 cup roughly chopped onions
2 tsp roughly chopped ginger (adrak)
4 cloves garlic (lehsun)
2 tsp chilli powder

Other ingredients
2½ cups boiled and peeled baby potatoes
3 tbsp oil
1 stick cinnamon (dalchini)
4 cloves (laung / lavang)
4 cardamom (elaichi)
¼ cup fresh cream
1 tsp sugar
Salt to taste

1. Heat the oil in a non-stick kadhai, add the cinnamon, cloves and cardamom and sauté on a medium flame for a few seconds.
2. Add the prepared paste and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
3. Add the fresh cream, sugar, salt and potatoes, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
Serve hot.
